Meet Chef Bill

Meet Bill. Bill is the executive chef at 37West Café at Koch Industries global headquarters in Wichita, KS. The café has been open for one year with Bill having run the kitchen from the start. Bill loves food and loves sharing his passion with every customer that walks into his café.

Bill got his culinary start in Austin, TX, graduating from culinary school and working in a few restaurants across the town. Not long after graduating, Bill bought a one-way ticket to Barcelona and spent the next two years expanding his culinary education across the country. Bill even spent one of those years working on a farm learning to raise animals and perfecting classic French charcuterie techniques including sausage making, rillettes, pates, and terrines. A few restaurants and a few years later, Bill returned to the states and began his career with Eurest as a sous chef at Café Koch in Wichita.

When Bill started with Eurest, Koch was breaking ground for a new building on their campus which would include the new 37West Café. Bill opened the café as executive chef and is dedicated to evolving the cuisine at each and every meal and making as much as he and his team can from scratch.

And when Bill says from scratch, he means it. 37West compiles their own mix of wild greens, including anything from lola rossa, living watercress, and frisee to arugula, baby kale, and whichever varieties of greens are in season. Each week these fresh greens are paired with one of 37West’s house made salad dressings, with four or five new choices each week. Soups are one of Bill’s specialties, making a scratch-made soup every day, with most being vegetarian, dairy free, and made without gluten. Since 37West opened, Bill estimates they’ve made over 200 different soups. If you’re looking to satisfy a sweet tooth, Bill’s team bakes all their scratch-made pastries in house with cakes, muffins, cookies, graham crackers, cheesecakes, baklavas, scones, and many others. Visiting 37West on a Friday? Bill’s menu reads “37th Street Tacos with House Made Everything.” The taco proteins range from cochinitas pibil, al pastor, and polla a la plancha to carne asada and beef tongue. Toppings? Try their house made crème fraiche or their variety of salsas paired with each protein. To spice things up, Bill makes his own hot sauce dubbed “Instant Karma.”
